The 'texture gap' mentioned on this page has a specific cause: dairy's structure comes from casein, a protein that folds into micelles and cross-links with calcium to form a genuine structured gel — that's what gives dairy yogurt its set and dairy milk its body. Plant proteins like pea, soy, oat, and almond don't replicate that structure; they can bind some water and fat, but they don't form the same calcium-mediated network, which is why plant-based yogurt tends to set weaker and plant milks can taste thin or feel gritty by comparison. Guar gum closes part of that gap through an entirely different route — not by mimicking casein's structure, but by building viscosity and water-holding capacity through its own hydrated polymer network, providing body and smoothness that the plant protein alone doesn't supply. Typical dosage ranges from 0.1–0.4%, adjustable to your protein source, target texture, and process conditions.

Formulation Guidance

For fermented plant-based products, hydrate guar gum fully in the plant milk base before adding the culture — this gives the weaker plant-protein gel structural support from the start of fermentation, rather than trying to reinforce a gel that's already set.

Guar gum's viscosity can mask the gritty mouthfeel of plant protein isolates, but how much dosage that takes depends on the protein source's particle size — a finely processed isolate needs less compensating viscosity than a coarser, less-refined protein source. It's worth testing dosage per protein source rather than assuming one setting works across pea, soy, oat, and almond bases, since each has a different inherent water-binding capacity to begin with.
