Overview

Gluten-Free Foods Grade (GG-GFF) is developed specifically for gluten-free bakery and specialty manufacturers. It's worth being precise about what 'replacing gluten' actually means here, because guar gum doesn't work the same way gluten does. Gluten is a protein network — gliadin and glutenin cross-link into a viscoelastic web when wheat flour is hydrated and mixed, and that web is what traps the CO2 released by yeast or leavening, giving bread its rise, chew, and open crumb. Guar gum has no protein network to form; it thickens purely by hydrating into a viscous, entangled polymer solution. The two mechanisms aren't interchangeable, but the outcome guar gum provides — enough viscosity and water-binding to trap gas and hold a batter's structure through baking — compensates for gluten's absence well enough to be functional. That's also why the dosage here (0.3–1.0%) runs considerably higher than in a conventional wheat-based bakery formulation: there's no gluten network sharing the structural load, so guar gum is doing more of the work on its own.

Formulation Guidance

Because there's no gluten network to share the structural load, gluten-free formulations typically need meaningfully more guar gum than the equivalent wheat-based bakery formula — don't assume a dosage that works well in a standard bakery application will translate directly here. Benchmark against your own bake test rather than porting a dosage over from a wheat-based recipe.

Different gluten-free flour blends (rice, tapioca, potato, or a blend of these) have different water absorption profiles, so guar gum's hydration behavior and final batter consistency should be re-tested for each specific flour base you use, rather than assuming one dosage performs identically across different starch systems.

A short rest period after mixing — 10 to 30 minutes — before baking or proofing gives the guar gum time to build toward its full viscosity, which continues developing over roughly the first hour after hydration. This matters more here than in a wheat-based dough, since gluten-free batters don't have gluten's more forgiving structure to fall back on if the batter goes into the oven before viscosity has fully built.
